It's citrus season! Everywhere I look I can see trees bulging with fruit. I'm seriously considering running down the street under the cover of night and raiding my neighbors mandarin tree. They'll never know...shh, don't tell...
When we went to my sister-in-law's for the Foundation Day long weekend, I set the niece and nephew to task stripping their 25 year old lemon tree. I ended up with nearly two buckets of lemons and a large bag of mandarins. Score!
So I've spent the last few weeks in a lemon-frenzy! I have loads of lemon-based recipes to share soon; cakes, preserves, jams, butters, ice-cream and alcohol! During said frenzy, I was left with 15 rind-less lemons and being a stickler for waste I decided to attempt to make lemonade. Here's my first concoction!
Raspberry Lemonade - Serves 4
- juice of 8 lemons, strained
- 1 1/2 cups of filtered water
- 1/4 cup of vanilla sugar
- 1 1/2 cups of raspberries (frozen or fresh)
- 2-3 cups of ice
- Combine all ingredients and stir until sugar is dissolved. Done!
Serve over ice. Add a dash of Bacardi, Vodka, Gin or Campari for a lush cocktail!
