My lemongrass is seriously overgrown. So over grown it took me nearly two hours to extract it from its pot, divide it up and replant. It's quite the grassy beast! With plenty of water it will multiply quickly, and can grow over 2 metres tall and span out a metre wide. In fact it's a little too easy to grow.
The fragrance of lemongrass is intoxicating. I adore it in soup, especially Tom Yum and Laksa. I often drink it as a tea with ginger. Lemongrass has anti fungal and anti bacterial properties which is useful in treating infections of the digestive system. Its analgesic properties make it perfect for treating inflammation associated with aches, pains and nausea. It is said to lower blood pressure, detoxify the kidneys, liver and bladder; and its rich in minerals like potassium, zinc, calcium, iron, manganese, copper, and magnesium. Win, win! And of course, it's fantastic with rice. I first had red rice in Indonesia. I has a lovely nutty flavour that is rather addictive.
Red Rice with Coconut and Lemongrass- serves 2 1 cup of organic red rice, washed 4 large slices of ginger 1/4 cup of finely sliced coriander stem 2 lemongrass stalks, bruised and knotted 3 lime leaves finely sliced 1/2 cup of coconut milk 3/4 cup of stock 1/2 cup of loose coriander leaves fresh sliced chilli as garnish (optional)
- Place your rinsed rice in a pot with ginger, coriander stems, lemongrass, lime leaves, coconut milk and stock.
- Cover with lid and bring to the boil, then reduce to a simmer.
- Cook for 10-15 minutes or until all liquid is absorbed. You can add extra coconut milk (approx 1/4 cup) if you would like a creamier finish.
- Mix through loose coriander leaves and serve with fresh diced chilli.
Red rice with coconut and lemongrass is fantastic with Indonesian and Thai dishes, especially coconut curries, chilli sambal, satay's and stir fried snake beans. Red rice is a lovely wild rice that is high in fiber and nutrients and can be substituted for any other long-medium grain variety. Enjoy!
